 What is EGCG in tea?

EGCG stands for Epigallocatechin 3 gallate. It’s a chemical compound, a sub-class of polyphenols known as catechin. These compounds are famous for their antioxidant properties.

 Do tea blends with other ingredients provide the same health benefits as pure teas?

There is very little research knowledge available on blended teas. Good quality teas if blended with beneficial herbs can offer multiple health benefits. However, a blend contains less quantity of tea leaves (as compared to pure teas) and hence the specific benefits of tea would be comparatively less.

 Does tea contain caffeine?

Yes, but a cup of tea contains far less caffeine than a cup of coffee. Tea also contains L-Theanine that helps counter the effects of caffeine. If you’re concerned about your caffeine intake, you will be happy to know that caffeine in tea virtually disappears after the first steep.

 Is decaf tea as healthy as regular tea?

There’s a widespread belief that decaffeination reduces the amount of antioxidants in the leaf, thus reducing the health benefits of the tea. But this belief is yet to be substantiated by research and science.

 Is decaf tea completely free of caffeine?

No. It’s impossible to remove all the caffeine content from tea. However, the quantity of caffeine in decaf tea is rather negligible, usually less than 5%.

 Is it true that tea doesn’t go bad?

Untrue. Like all organic substances, the compounds that produce flavour and health benefits degrade with time due to exposure to light, moisture and air.

 What care should I take while storing tea?

The first and foremost precaution while storing tea is to keep it away from air, light, moisture and heat. Avoid storing tea in the cabinet right above the stove. It might be convenient for the kettle but not conducive for storing tea. Store tea in air-tight containers. Moreover, never put a damp teaspoon back in the container to scoop more tea.

 What is cold brewing?

Cold brewing is one of the simplest and possibly the healthiest brewing technique that can be used for any kind of tea. Brew your chosen tea in a glass of water (or a glass container) and refrigerate it for 8 hours or more without removing the tea from it. Take your glass out, remove the tea bag/leaves and savour a refreshingly healthy cup. Cold brewing is especially recommended for green and oolong teas as it makes their flavour smoother and sweeter.

 How can I brew iced tea?

Brew your tea with a higher ratio of tea to water (as compared to hot teas) so that you get a stronger brew, at least twice as strong as the hot tea brew. If you want an even stronger brew, do not steep it for longer, instead add more tea. Let the infusion cool down before pouring it over ice cubes so that it doesn’t become too diluted. Adding sweetener when the tea is still hot makes it dissolve more rapidly. The best dissolving sweeteners for serving unsweetened iced teas are sugar syrup and honey.

 How does oxidation impact the tea brewing process?

When the tea leaves and their compounds come in contact with heat, humidity and oxygen (air), a chemical reaction named oxidation occurs which is vital for the taste, flavour and health benefits associated with tea. The criteria for choosing a good tea that is conducive to the oxidation process are as follows:

  • The leaves should be clean, glossy, even-sized without twigs or stray particles

  • The tea should not be dusty, crushed or powdery

  • Upon steeping, the infusion should be clear and not muddy or unclear

  • The aroma and taste should be fresh

Any beverage that resembles tea but does not come from Camellia Sinensis – the tea plant, is called Tisane (Tee-Sahn).

There is a possibility of staining as tea contains compounds called tannins. You can avoid it but taking these simple but regular measures:
