1. Thai Iced Tea
Ingredients:
- 2 tbsp. loose-leaf black tea
- 1 pod star anise
- 2 pods cardamom
- 1/2 cinnamon stick, optional
- 1/8 vanilla bean, optional
- Tamarind powder, to taste, optional
- 1/4 tsp. almond extract, optional
- 1 cup boiling water
- 1 tbsp. sugar
- 1 tbsp. sweetened condensed milk
- 2 tbsp. evaporated milk, or coconut milk, or whole milk
Preparation:
-Steep the tea, star anise, cardamom, cinnamon stick, vanilla bean, tamarind powder, and almond extract (if using) in the boiling water for 5 minutes
-Strain the tea
-Stir in the sugar and sweetened condensed milk until both are completely dissolved
-Fill 2 tall glasses with ice
-Pour the tea over the ice, leaving an inch or so of space at the top for the evaporated milk
-Top up with more ice if needed, and then drizzle with 1 teaspoon of evaporated milk on each glass of tea
2. Classic Lemon Iced Tea:
Ingredients:
-1.25 litres of water
-2 tbsp. of black tea leaves
-½ cup sugar
-3 tbsp. lemon juice
-ice cubes, as required
-Lemon slices & mint for garnishing
Preparation:
-Boil 1.25 litres of water on a medium flame
-Once the water comes to a boil, switch off the flame
-Add 2 tbsp. black tea powder
-Add sugar and mix well
-Let the tea leaves steep in the water for 4 to 5 minutes
-Add 3 tbsp. lemon juice
-Strain the lemon tea in a steel or glass jar
-Let the lemon tea cool at room temperature, then put it in the fridge for further cooling
-Out 3-4 ice cubes in a tall glass, along with 2-3 lemon slices
-Pour the lemon tea in the glass
-Garnish with a lemon slice and mint leaves
3. Peach Iced Tea
Ingredients:-1 ripe peaches (thinly sliced)
-½ cup granulated sugar
-1 and ½ cups water, divided
-1.5 tablespoons black or green loose leaf tea (2 tea bags will do too)
Preparation:
-Add peaches, sugar and 1 and ½ cups of water to a saucepan
-Bring the mixture to a boil over high heat
-Turn it down to medium-low and simmer for 30 minutes
-Stir and crush peaches into the mixture every 5 minutes
-Pour the peach mixture into a blender and turn it into a puree
-Pour the puree through a fine mesh strainer to strain out the peaches
-Pour into a pitcher and set aside
-Bring remaining 6 cups of water to a boil in the saucepan
-Turn off the flame, and add the tea and brew for 3-4 minutes
-Once done, strain out the tea leaves / remove the tea bags and transfer to the pitcher
-Stir it all and refrigerate the final mixture until cool
-Add ice cubes and peach slices to it as a final touch
4. Chamomile Strawberry Orange Iced Tea
Ingredients:
1 chamomile tea bags
1 and a half cup filtered water (room temperature)
1 juice oranges (peeled, cut into slices - no seeds)
3 large strawberries, all cut in half
1 tsp. honey
2 tsp. hot water
Preparation:
-Place 1 tea bag and 1 1/2 cups water in a jar (with a lid)
-Put 2 orange slices and 6 strawberry halves in the jar
-Cover with lids and refrigerate 12 to 24 hours
-After refrigeration, remove the tea bag from the jar
-Mix the honey and 2 tsp. of hot water
-Add one tsp. of the mixture to the concoction
-Stir once and pour the chilled brew in a tall glass
5. Hibiscus Iced Tea
Ingredients:
-1 hibiscus tea bags
-¾ cup sugar
-1 navel orange (thinly sliced)
-1 lime (thinly sliced)
Preparation:
-Bring 1 cup of water to a boil in a medium saucepan
-Once boiled, remove from heat, and add the hibiscus tea bags
-Cover with a lid and steep for 5-7 minutes
-Once brewed, remove the tea bags
-Add the sugar, and stir until dissolved
-Next, add the orange and lime slices
-Put the mixture in the refrigerator and cool for 2 to 6 hours
-After cooling, serve in a tall glass over ice cubes

Preparation:
-Bring 2 cups of water just to a boil, turn off the heat.
