Ingredients:

  • 3 tbsp - ground cinnamon
  • 1 tbsp - ground cardamom
  • 1 tbsp - ground ginger
  • 1/2 tbsp - ground allspice
  • 1/2 tbsp - ground cloves
  • 1/2 tbsp - ground nutmeg

Preparation Method:

Recipe of Masala Chai

Ingredients:

  • 700ml - water
  • 150ml - milk
  • 3 - black tea bags
  • 4 tsp - sugar or to taste
  • 1 tsp - fennel seeds 2-star anise
  • 4/5 - cloves
  • 5/7 - green cardamom
  • ½ - cinnamon stick/cassia bark

Preparation Method:

  1. Boil the water in a saucepan (medium heat) with the star anise, cassia bark, cloves, fennel, green cardamom, and tea bags.
  2. Once the water is boiling, lower the heat and brew the tea for 7-8 minutes on low heat, mixing occasionally.
  3. Add milk and sugar, mix well and brew for another 5 minutes.
  4. Switch off the heat as the tea should now be perfect.
  5. Remove tea bags from the tea and strain them into a jug. Pour into cups/glasses and enjoy the best tea ever.

Makes 3/4 cups or 6 small chai glasses.

Recipe Notes

  • When breaking down the spices add the chai masala also and break them down completely.
  • This is a basic chai recipe although you can add more things (like lemongrass, adrak/ginger, oolong, etc.) or eliminate a few things as per your taste.
  • Do not steep the tea leaves for too long as this will make it bitter tasting.
  • Sugar can be substituted with honey or jaggery.
  • Substitute cow milk for a vegan alternative.
